Coconut Yogurt With Coffee Cacao Granola

Coffee is something that certainly makes most people get out of bed in the morning and start the day with energy. Have you ever tried to mix it up with some of your favorite nuts and delicious cacao nibs? I'm sure I got you hooked now!

I am a sweet tooth and I love to mix cacao and chocolate into pretty much everything. Today we learned about probiotics and how we can easily make our own yogurt out of fresh coconut. It was so much fun making those and I loved it topped with this coffee cacao granola.

Are you ready for this decadent, mouth watering breakfast?

Ingredients for Granola:

2 cups of almonds

1/2 cup of cacao nibs

1/2 cup of honey

2 tablespoons of coffee

Put all the ingredients into a food processor and blend them up. Make sure you don't over process it, some crunchy texture is really nice. I opted for almonds, but cashews and walnuts also go well. If you like sweeter granola, add some more honey. If you want it stronger, spoil it with coffee! Store the granola in an airtight container until you use it.

Ingredients for coconut yogurt:

Meat from 3 fresh coconuts

Probiotics (buy at pharmacy or health store)

Blend up the coconut meat in a high speed blender. You may be able to blend it all at once if you have a big strong blender. If not, do turns. Add a little water to make sure the blender can do its job. When you have a yogurt like consistency, put your blend coconut in a large bowl. Add the probiotics to it and stir with a spoon. We used high potency liquid capsules, but you can use any of the capsules from the pharmacy and open them up to get the dried bacteria into your yogurt. Let the bacteria ferment your coconut for about 5 hours. Its consistency and flavor will change and you will know when it is ready.

Serve the yogurt in a beautiful glass container, top it with the granola and take it to work. It truly makes your day!

Don't be surprised if your colleagues place a breakfast order for the next day! 😉

My 30 Day Fellowship Journey

It is hard to believe that a whole month has gone by. I still remember the day we arrived to Epicself. A lot has happened for me since then on a physical and emotional level.

The first week was really hard for me. I usually have no problem adjusting to a new place, but for the first time I felt something like being home sick. I missed my friends and social life. I had not spend much time with myself until now and I knew that was a big necessity and a big challenge.

Emotionally, I ran into a couple of walls and obstacles. Some of them I was able to overcome, while others are still stuck deep. There are old thinking patterns that keep me from moving, and it frustrates me that I'm not able to move forward. I just keep finding excuses. Daniel is amazingly patient and is helping me see those repetitive patterns. But the fact is, only I can go past this. By moving, the walls will get thinner. Nobody can make me move, nor move for me.

I realized that my whole life I have been running away from things. Afraid to take responsibility for my actions and myself. But what am I afraid of? I hope I can turn this frustration in positive energy and walk the way I'm meant to walk. I truly got a good perspective of what it means to be an entrepreneur, how much work it is and what you need to make it happen. Now the question is, do I want to be an entrepreneur and can I make it happen?

I absolutely loved the yoga and pilates classes. Amber shares so much knowledge and really knows when to be gentle and when to challenge our bodies. I got to connect to my body in a different way and we are having a much better relationship now. Before I came here, I saw my body as weak and a limiting force. Due to my injuries and pain, I was unhappy many times because it kept me from doing things and movements. Now I have come to realize thanks to both Daniel and Amber that my mind is the limiting force here. My body is strong, has all it takes, so does my spirit. Now I have to tell myself a different story and get rid of all those excuses that keep me from showing up and shining my light.

The pilates classes have helped me ease my pain and connect to muscles in my body that weren't doing their work. I was surprised that all those muscles are already there and they are strong enough. I just had no idea how to connect to them. I accomplished my goals here 100%. I have built upper body strength, reduced my neck and back pain and have a toned body. I even lost 10 pounds!

I'm a person who lives and learns through experiences. The excursions to the beach and the organic farmers markets were awesome and I got to connect with interesting people. My personal highlights were a chocolate making class with a local artisan chocolate maker, and the trip to Nauyaca waterfalls. I will never forget riding on Daniel's motorcycle to do the coaster zip line, so I could overcome part of my fear!

I'm super excited to go home and move my chocolate project forward. I'm proud of my web-page that I developed with Amber's help and I can't wait to apply my new skills and knowledge. I have made new friends and connected to interesting people. There are three more people who believe in me and I have all the tools to make things happen. And as Daniel would say, all I have to do now is “make shit happen”!

Tapping Into The Raw Vegan World

I love food and cooking. When I travel, trying different local foods and doing culinary tourism is part of the whole fun. It is as important as sightseeing for me. I consider myself as a foodie and flexitarian. Sounds funny, but that actually exists. Flexitarians have a mainly plant-based diet, with occasional inclusion of animal products.

My only concern before I came to Epicself was if I could stick to the raw vegan diet. The idea of trying out a vegan diet was appealing to me. I was curious to look into it, and I took it as a challenge for me. I know that my body does not deal well with dairy and digests meats very slowly. I had consumed much more of these foods (PLUS sugar) as I usually do due to a stressful schedule and my goal was to get off that wheel again.

The hard part was the raw. First of all, I didn't really know much about that kind of lifestyle. As a chocolate lover and chocolatier, I had experimented with raw vegan desserts before, which I enjoyed. But in terms of food, salads, salads and more salads was all I could imagine we would be able to eat. I'm happy that I was proved wrong!

Spending time with Amber in the kitchen was great. I learned a lot about raw vegan food preparation, proper food combination and how to make certain foods more digestible. The funniest technique ever was massaging the salads! It softens for example collard greens and makes them easier to digest by breaking their cell structures. It totally makes sense!

I enjoyed learning new recipes for sauces and salad dressings, something I hadn't really incorporated much into my cooking skills yet. Making dehydrated foods and preparing meat replacements (like in the taco recipe here) was super cool! I couldn't believe how much walnuts and miso together tasted like ground beef! It actually tasted much better!!!

I loved spoiling Epicself staff with my vegan chocolate creations and learning about probiotics. I live in the tropics and they are very hard to come by here. I was super excited about the coconut yogurt we made. So easy and delicious. The best - it helps digestion and stocks our intestines up with good bacteria that support our immune system. I am carrying some of those capsules home for sure!

Here are the main benefits and lessons I took away from tapping into the raw vegan world:

  • Separating and pin pointing foods that caused me indigestion, bloating and an unhappy stomach. I know which ones to stay away from completely and which ones I have to combine properly so they don't cause inconveniences.
  • Eating less and loosing weight. I used to stuff high quantities of food into my mouth and was always hungry. My portions get smaller and smaller and I know exactly when I'm satisfied. I can go much longer without being Hangry (that info will make my friends happy)! I lost 10 pounds this month and I'm back to my ideal weight! Yay!
  • Cleansing my body and skin. I certainly have a softer and cleaner skin with a pretty glow to it. My body is still detoxing, but I feel much lighter in any aspect. I became a fan of my new breakfast – plain green juice with lime! I won't miss out on it ever!
  • Having a new skill set. I'm ready to dive into making raw vegan desserts!
  • Recognizing my needs and limits. I know now that a cooked meal once in a while is necessary for me to connect with myself and stay grounded. The high energy from raw foods can take me up to the clouds at times and I lose focus!
  • Being energized. I came to Epicself really tired and burned out. I have found my energy and glow back!

I am a foodie and this was a very interesting excursion for me. I take a lot of knowledge, impressions and experiences home and I'm very grateful for it. What I want to keep up is proper food combining, staying away from dairy, and including more fermented and probiotic foods into my diet. My goal is to have two raw vegan and one cooked meal a day.

Rawsome Lasagna With Vegan Cheese And Pesto

Somebody said Lasagna?

I am a HUGE fan of Italian food and Lasagna is one of my favorite dishes. I rarely make it at home, because it is quite time extensive and you can't get away with just making a small quantity of it.

This rawsome Lasagna is delicious and ready in an instant! The pesto and the vegan cheese (we bought it at a local farmer's market here in Costa Rica) give it a special touch and tasty flavor. If you want to be very elaborate, you could also make an additional red sauce that we used for our vegan pizza.

Ingredients (makes 4 pieces of Lasagna):

1 large zucchini

2 ripe tomatoes

1 small vegan cheese of your choice

Cut the zucchini, tomatoes and cheese in thin slices. If you don't have access to get vegan cheese, you can make your own. Check out the recipe here!

For the pesto:

1 cup of sunflower seeds

2 cups of basil

1/3 cup of olive oil

3 gloves of garlic

pink Himalaya salt

Put the pesto ingredients in a high speed blender or food processor. Blend until you get a homogeneous paste. Add Himalaya salt to taste.

To make the Lasagna, place a layer of zucchini slices on the bottom. Spread cheese over the zucchini and then add a layer of tomatoes. Put pesto on top. Repeat this for 3 more layers of zucchini, cheese, tomatoes and pesto.

Prego! Enjoy your Lasagna with a nice side salat or some vegan crackers.

Be Feminine, Be Empowered!

Being feminine and being empowered goes hand in hand for me. As emancipated, career oriented, successful women we often times shift into our masculine side. All of us have a masculine and feminine side, there is nothing wrong with that. But we can only stand in our true power when we are able to be soft and feminine. That doesn't mean that people can just walk over us. No!

Being feminine means being connected to your essence. It means being strong in your own way (not in a masculine way), be receiving and authentic. Humans are naturally drawn to that feminine essence, as it embodies wisdom, compassion, abundance and love.

Have you ever been to a party or an event and this one woman comes in. Everybody looks at her. She is charismatic, she is in her center, and she knows who she is and what she wants. She doesn't care what anybody thinks of her. She let's others open her the door, she let's the waiters serve her. She smiles and receives. But she is the most powerful person in the room and everybody is drawn to her. She stands in her power, she embodies femininity.

However, most of us have forgotten how to be feminine. As women, we are constantly challenged to prove ourselves worthy. Society tells us how we should look, act and speak in order to be considered beautiful, desirable and acceptable. The masculine characteristics that are promoted by society and on TV are the traits that are the keys to success. Many of us were raised to be strong, smart and independent, but those masculine energies are not sustainable over the long haul if we don't replenish our female energies. We don't realize that they have the key to the power switch, and how to turn it on. Me included!

When I started my spiritual journey a couple of years ago, I had totally forgotten how to love myself and trust my inner voice. I was full of limiting beliefs, fear, self-judgment, and trauma that had been blocking my energy and had kept me stuck. I was a people pleaser, had zero self-esteem, and saw all women as competition. I was always hard on myself, beating myself up for everything.

At the peak of my unhappiness, I decided to hire a coach. She was a beautiful, strong woman who really owned it and showed me ways how I could learn to be more feminine. It wasn't easy to change sides and to start accepting myself for what I was and what I wasn't. It is still a journey today and as much as I feel I have come quiet far down the road from where I was, I feel there is still a long way to go.

There are some key practices that helped me most on my journey and that I want to share with you today:

  1. Self care – taking at least half an hour for myself each day made a big shift. Making a nice meal for myself, making chocolates (my passion), having a nice long shower or putting some body mousse on are ways to spoil myself.
  2. Dancing - I can forget everything around me and I feel totally sexy! Movement in general helps me to clear out old energies, feel grounded and peace within myself.
  3. Role models - Having women in my life that I could see as a feminine role model was important. Surrounding myself with friends who inspired me rather than energy vampires was another big one!
  4. Getting support - Support and community was a game changer and completely erased some of my old thinking patterns. I didn't have to do everything on my own, it was totally ok to ask for help. I started going to women only events and learned how powerful we are, even more so if we stand together and support each other, instead of putting us down.
  5. Living my passion – Finding out what my true purpose and passions are and stepping into that energy was truly inspiring and kept me moving in the right direction. The more you do what you love, the more positive you see everything, the easier it is to change your mindset and success on all level is what you get!

What are the benefits of being feminine?

  • you have access to your inner power source
  • you become more intuitive and take decisions not only with your brain, but also with your heart
  • people respect you
  • men adore you 😉
  • you have the tools to replenish your energy (no burn outs)
  • your energy is irresistible and contagious
  • your self-esteem grows everyday

As a yoga teacher, I love teaching women groups. We dance, go on nature walks, meditate in circles, tap into our energies. Women are so open and receiving and have so much fun when they can just be. That is a main trait of the feminine, just be! Really, most of the time that is all we have to do and the world comes to us.

Recently, I was watching a TED talk about femininity. The speaker talked about a practice of an ancient indigenous to pray for abundance in their harvest. All the women from the village would go out before sunset and they would stand on the fields and move their hips in circles over the crops. They believed that their energy fertilized their fields. I actually cried, it was so beautiful. It inspired me even more to keep moving into my feminine and tap into that power.

How Conscious Yoga And Pilates Practice Changed My Body Awareness

I came to Epicself 3 weeks ago with a long history of being in pain. My my upper and lower back, especially my neck were hurting constantly and for me it was just normal. I had also suffered a recent injury on my pectoral muscle and I wasn't sure how my body would deal with the daily yoga practice.

The first class already changed my life when I met the amazing foam roller (my new boyfriend, lol!). Who knew that by rolling out my feet with tennis balls would relax some of the tensest muscles in my body! And by laying on the roller, the whole spine aligns and gets back into its natural shape. How easy is that!!! A new world had opened up for me and I was truly impressed and amazed how good I felt.

With every class my body awareness has become greater. It is kind of crazy how many things and moves we do unconsciously and how our body just follows autopilot. I feel like I'm finally using the right muscles to move my different body parts, but also learn how to move the body as a whole. I'm getting stronger and within 3 weeks I have developed quiet some abs and triceps!

I have fallen in love with the pilates practice. I had no idea what it was all about, other than a workout and a trend. Conscious muscle training and rewiring the brain to use the right muscles for the work is so powerful and life changing! I never imagined that I could heal my body issues at this speed!

When I first met Amber I knew instantly I had to come here to Epicself and practice with her. I knew only good could come out and I do not regret taking my chance. It was the best decision I made in a long time and I'm looking forward for more. I love her mindful practice and meditations. She always finds a way to touch my heart, and the right words of motivation. She challenges us, but is also very aware of what our body needs most in the moment and she is so patient. Qualities I really appreciate in a yoga teacher.

I love practicing outside. We have been to the beach twice and we did yoga on a paddle board yesterday! I find it stunning how much muscle work it takes to actually balance myself on uneven substrates, and I noticed that my left and right side are not doing the work evenly. Such a great insight! I'm a total head person and my mind is usually wandering off to other places and thoughts. But hey, if you are not present in your body when you are practicing on a board in the ocean, chances are you may fall into the water!

Before coming to Epicself, I had some goals I wanted to achieve from the daily yoga and pilates practices.

  1. Improving my posture - I am very tall and my whole life I have been hunching over, trying to hide and keep myself small. My back muscles are really very weak and strengthening them was one of my main intentions.
  2. Building (upper) body strength - Most of the time, my muscles are lazy and don't want to do their job. I avoid hard workouts because they just increase the pain in my body. And now I know why! I seriously got to know muscles in my body I had no idea they existed. And other muscles had completely taken over the work for them!
  3. Being pain free – I was more then ready to learn yet another technique that could potentially alleviate my neck pain and all that comes with it.

We still have almost 10 days to go, but I have already achieved my proposed goals. My upper body strength and posture greatly improved. I'm much more focused on using my abs for certain movements and let them work in favor of my neck.

As a nice side effect, my self-esteem also got a little boost! I felt so proud when I stood up on the paddle board yesterday and even do some yoga poses! I feel much more grounded and self secure in my practice and I will look for other challenges and adventures to take my body on!

I'm ready to take it to another level. I have come to realize that I have said NO to so many things in my life because I felt limited by my body. If it was just to be seen, going for long hikes or doing workouts. I always told myself that I couldn't do it, and that it was not worth taking more pain. But without risking, you will always wonder what if...

Veggie Wrap With Mediterranean Style Hummus

If you like a light lunch with a fresh taste, veggie wraps are a great option. The are also very fun to make, as you can be super creative. Everybody can make their own version and you don't have to follow a strict recipe.

It was a beautiful, hot day here at Epicself HQ and we cut up our favorite veggies and used a Kale leaf for wrapping. You can also use any other greens to wrap. We whipped up a Mediterranean style Hummus to go with our wrap! So good!

Ingredients for two wraps:

1 red pepper

1 avocado

1 cucumber

1 carrot

Cut them into large slices and put them on your favorite greens to wrap.

Traditionally, Hummus is prepared from cooked chickpeas (garbanzo beans). Our raw vegan version is made with sunflower seeds, which are a great source of vitamins and minerals.

They are an excellent source of Vitamin E. Vitamin E has significant anti-inflammatory properties and helps preventing cardiovascular disease in reducing cholesterol levels.

Sunflower seeds are a good source of magnesium. Magnesium is necessary for healthy bones and our body's energy production. On top, it relaxes us and calms our nerves.

Sunflower seeds are a good source of selenium, an important trace mineral. It helps your body to detoxify and assists in repairing your DNA. Pretty powerful!

Ingredients for the Mediterranean style, raw vegan Hummus:

1 cup of sunflower seeds

¼ cup of water

2 cloves of garlic

½ cup red onion, chopped

2 limes, freshly juiced

½ cup of Parsley, chopped

pink Himalaya salt and black pepper to taste

Soak the sunflower seeds for a couple of hours before using them. You don't have to, but it makes your hummus much creamier. Put your soaked sunflower seeds in a high speed blender or food processor and add the water. Once you have a uniform, thick paste, add all of the other ingredients. You can spice up your hummus with Cayenne pepper and paprika, we used pink Himalaya salt and black pepper.

To serve, top your veggie wrap with your yummy hummus and enjoy! We put spicy cauliflower poppers and some vegan bread crumbs on ours! Killer!

Living The Epic Way

It's been tow weeks since I arrived to Epicself HQ here in Manuel Antonio. Living in Central America for the past 15 years, I was familiar with the language, the tropical climate and the “Pura Vida”, easy going style of life.

Of course I had my expectations of how this fellowship experience was going to be, and what I wanted to get out of it. I was ready to live the epic way! I had purposely chosen this opportunity to move out of my comfort zone, away from my familiar environment and my people. Getting away from my everyday responsibilities at home and in my full time job was something I anticipated. I needed some time to myself and to find out in which direction I wanted to go personally and with my business. I was also seeking accountability partners, as I am not the most disciplined person in the world. Yes, one of my favorite activities is procrastination!

Amber and Daniel picked us up at the shuttle and we immediately dove into the work. I was challenged by Daniel's discipline, clarity and speed of teaching. Learning about the raw vegan diet and nutrition from Amber and attend her yoga classes was something I was really excited about. Initially, I had some trouble to focus and to adjust to the daily itinerary. The last couple of months had been emotionally challenging for me. I had lost all my energy and that enthusiastic and positive part of me in the process.

In the airplane on my way here I was thinking what kind of person I was going to be in a month. I realized that nobody could make me that person I aspired to be. To become that better version of me, I had to put effort.

I felt very lonely during my first week at Epicself . As much as I needed to spend time with myself, it was challenging. A lot of stuff came up through business training. I was telling myself that I wasn't good enough. Other people already do what I want to do and they do it much better. It was hard to listen to that voice, see what excuses I found to not show up! One night I literally had a breakdown and cried. I never cry! I felt so good and clear after, it was a blessing to release some of those limiting energies.

The raw vegan diet was another big challenge for me. I love good food and cooking. The green juices and the salads we prepared initially didn't satisfy me, and my stomach had a hard time digesting all this raw food. Amber suggested that I have some cooked meals every now and then, which made a big difference in my body. I felt more grounded and happier. I am making progress though and I'm proud I haven't had a cooked meal in two days!

My spirit has lifted and I feel more whole. I enjoy very much being here and my enthusiasm is slowly coming back. Everyday is stuffed with new adventures, teachings and knowledge. Amber's yoga and pilates classes  have been life-changing for me. I had been struggling with pain in my neck, shoulders, and knees for the past 20 years and restricted physical exercise to a minimum.  My yoga practice was limited to poses which wouldn't cause pain in my body. After only one class with Amber, something had shifted in my back and I felt great! I'm making progress everyday. A whole empire of beliefs around my body is collapsing and I feel amazing. I'm reconnecting to spaces in my body I didn't even know existed! My goal is to build enough upper body strength and improve my posture.

Daniel's business coaching is so much fun. He always comes up with new ideas and activities, and I'm impressed by his playfulness, yet firmness in teaching. It is so valuable to see behind the curtains here at Epicself. Amber and Daniel do an amazing job and work hard to be able to live the epic way. I have gained more clarity in what I want to do and what I don't, and what my true passions are. I feel more confidence in myself and the way to move forward with my chocolate business. Now I just have to go do it!

My personal highlight besides the yoga classes is to walk to the beach and just be in nature. I love being in the warm water, our play time and photo sessions. I feel so much happier and connected to myself. My goal is to bring that feeling into my everyday life.

Delicious Raw Vegan Falafel With Coconut Dill Tzatziki

Yesterday we prepared a bunch of yummy raw vegan foods for the dehydrator. It was kind of difficult to not eat them right away! I was craving something hearty and chose to make some raw vegan Falafel.

Falafel are one of my favorite vegetarian dishes. The taste and texture of these flavorful chickpea balls are so satisfying, and actually they are really healthy. They are low in calories (if you are watching your weight), very high in fiber and loaded with proteins. But in most places they are deep fried and sometimes too greasy, so making your own is definitely a good choice.

We had so much fun to recreate that flavor in our raw vegan version of Falafel, and it came out truly amazing. That amazing, that I almost didn't get a picture of my creation! They were gone in literally no time!

Can't wait to try them? Here is the recipe!

For the Falafel you need:

  • 1 cup sesame seeds
  • 1/2 tsp. Himalayan salt
  • 4 carrots
  • 2 cloves garlic
  • 1/2 freshly squeezed lime
  • 1/2 tsp. ground cumin
  • 3 Tbsp. flax meal
  • 1/2 cup fresh parsley

Preparation of the Falafel:

Finely grate the carrots, cut the garlic and the parsley. If you are lucky to have a food processor, just put everything in there and mix together. Put everything into a large bowl and add the lime juice, the flax meal and seasoning. We used pink Himalaya salt, ground cumin, ground coriander seed, Cayenne pepper and paprika. It really depends on your taste and you can play around with the flavors. We also added some fresh dill to the mix for a nice flavor.

The flax meal will help you to get the desired stickiness to the mix. The lime juice should do, but you may have to add a little bit of water. Once your mix is ready, form little balls with your hands. Get messy, it's fun!

raw vegan Falafel trayPut your Falafel onto a tray and in your food dehydrator at 118 degrees Fahrenheit (47 degrees Celcius) for at least 6 hours. I know....your patience will pay off! Meantime you can read more about the benefits and use of the dehydrator in our posts from yesterday and make a yummy dip or tzatziki!

For the vegan Coconut Dill Tzatziki you need:

  • 1 1/2 cups of coconut kefir
  • 1/2 cup of sesame seeds
  • 1/2 cucumber or zucchini
  • 3 cloves garlic
  • 1/2 freshly squeezed lime
  • 2 Tbsp. olive oil
  • 2 Tbsp. fresh dill
  • Himalayan salt and pepper to taste

In case you don't have access to coconut kefir, 1/2 cup of organic coconut milk works as well. Place all ingredients into a high powered blender and blend until smooth and creamy. If you don’t have a high powered blender, cut the ingredients into smaller pieces.  Some chunkiness is fine! You can add salt and pepper to taste and put your tzatziki in the fridge.

Once your Falafel are ready, get creative! Serve them with your favorite salad or wrap them in a fresh collard leaf, top them with your coconut-dill tzatziki or just snack them as they are. We had all of the versions here at Epicself HQ. Bon Appetite!
