Banana Mango Pancakes

Sunday = Pancakes. At least that’s how it is was in my family when I was growing up. Waking up to the smell of pancakes wafting through the house on the weekend? One of life’s greatest pleasures. Okay, that may be a bit of an overstatement, but sharing pancakes on the weekend with your family or friends is a sure way to bring some magical juju into your day, especially if you make this recipe of raw vegan banana mango pancakes!

Traditionally, pancakes are made with flour, sugar, butter, and eggs — all out of the question for a gluten-free vegan or raw vegan lifestyle. However, there are ways to recreate a delicious pancake without compromising your gut or your morals and this recipe will teach you how.

The blend of banana and mango gives a tropical twist, while the cinnamon accentuates the nutty almond flavor. These delicious pancakes are healthy and satisfying — the perfect addition to a brunch date and an ideal snack to take with you wherever adventure awaits.

Banana Mango Pancakes (raw vegan, gluten free)

To get started, you’ll need a dehydrator. 

Ingredients:

10 small, ripe bananas

3 tsp. cinnamon

1 1/2 C almonds

1 C mango, chopped

4 dates

Preparation:

Place bananas in a bowl and mash with a fork until broken down and slightly mushy. Set aside. Pulse the almonds and dates together in a food processor until finely chopped and add to banana mixture. Lightly incorporate remaining ingredients.

Use a nonstick dehydrator sheet and spoon out pancakes into 3” wide circles. The pancakes should be roughly 1/2” thick. Dehydrate for 4 hours at 118 degrees. When dry enough to turn, flip onto a mesh screen. Use a knife to help separate the pancake from the nonstick sheet if necessary. Dehydrate for another 3-4 hours. When ready, pancakes should be soft inside with a light crust on the outside.

Servings: 5

(recipe makes 20-22 small pancakes, for a stack of 4-5 small pancakes per person)

Serve warm right from the dehydrator with a drizzle of coconut oil and honey. Add a dash of cinnamon and cacao and enjoy. The portions for this recipe allow you to have enough pancakes to share with your friends and family!
