Mint Pistachio Coconut NiceCream Sandwich with Cacao Macuna Brittle Cookies

This Mint Pistachio Coconut NiceCream is a major upgrade on your typical ice cream sandwich is jam-packed with superfoods and greens to energize your body and keep you radiant and glowing. Ingredients (makes 6 sandwiches):

 

~2 cups fresh coconut meat

~4 frozen bananas

~1 tbsp Vitamineral green powder (or spirulina)

~½ cup raw pistachios, chopped

~¼ cup cacao

~1 tbsp macuna

~¼ cup coconut oil

~¼ cup lecuma

~½ tsp mint extract

~6 round forms (can be found here)

 

Instructions:

 

Mix cacao, macuna, coconut oil, lecuma and mint in a bowl to form a dough-like consistency – set aside.

 

Blend coconut meat, bananas and green powder in the Vitamix. – set aside.

 

Spread down a layer of the cacao mixture and spread to a ¼ inch thickness. Place one of the round forms on top of the cacao mixture, and fill with ice cream mixture, leaving ¼ inch room at the top.

 

Spread a final layer of the cacao mixture on top of the ice cream. Repeat for the remainder of ingredients.

 

Freeze ice cream sandwiches until fully firm.

 

Remove ice cream sandwiches from freezer and allow to thaw just slightly. Press chopped pistachios into the sides of the sandwiches.
