Raw Coconut Tabouli Recipe

But fear not! There are always fun alternative recipes bursting with flavor that don’t call for any grains what so ever. Thats right, like this delicious crunchy Vegan Raw Coconut Tabouli recipe. Its main superfood ingredient, coconut makes this a powerhouse of nutrients with bad bacteria and anti-virus fighting properties. Ingredients:
~Meat of 5 coconuts
~1 large bunch of cilantro
~3/4 cup dill
~Heaping handful of basil
~2 Tbsp Tahini
~1 Tbsp Turmeric
~2 tsp Pepper
~1 Tbsp Italian seasonings
~1 tsp Paprika

 

 
Directions:
1) Blend coconut meat in food processor until it is chopped into rice sized pieces. You should have about 4 cups. Set aside in a large mixing bowl.
2) Combine all remaining ingredients in you food processor and blend until all herbs are minced well.
3) Mix the herb blend into the coconut rice until completely coated.
4) Spoon Tabouli into romain lettuce or purple cabbage leaves of eat is straight from the bowl. Top with avocado or any of you favorite add-ons and enjoy!
Serves 4-5 persons
