I’ve finally found my weakness! This raw vegan banana walnut cheesecake is to die for! It’s very rich and creamy without any dairy or added sugar.

FOR CRUST

  • 1 1/2 Cup Walnuts
  • 1/2 Cup Almonds
  • 1/2 Cup Dates
  • 1/4 Cup Water

Blend ingredients in food processor until consistency of dough. Press into round container then place in freezer.

FOR FILLING

  • 1 Cup Organic Vanilla Soymilk
  • 1/2 Tsp Coconut Oil
  • 1/2 Cup Walnuts
  • 1 Banana

Blend ingredients in high speed blender until consistency of cream. Pour over crust and add walnuts. Freeze for 2-3 hours.

TO ENJOY:

Let thaw until soft enough to cut. Sprinkle cocoa nibs and walnuts on top. Don’t wait too long because this yummy treat will start to melt quickly (see below!)
