I love good fresh Mexican salsa and thought why not try a Pineapple Salsa?  Truly – good fresh Mexican is a main passion of mine – the freshness of the flavors is unbeatable.  I’m now obsessed with the pineapple variation and eat it most days.



5 ripe tomatoes

2 large onions

5 garlic cloves

1 whole (seeds included) jalapeno for mild,  2 for hot

Juice of 2-3 limes

2 tspns salt

2 tablespoons olive oil

large handful of fresh cilantro

1/3 pineapple



Place all ingredients into a food processor and process on high for 2-3 minutes.

Serve with guacamole and chia seed crackers.
