For lunch at the EpicSelf HQ kitchen we whipped up a raw, low-fat version of one of our favorite Middle Eastern dishes, the Falafel. This yummy low-fat Raw Vegan Falafel recipe is dairy and gluten free with no added oils. It’s quick, easy and versatile for any occasion. Packed with phytonutrients and methyl groups to keep your cells young, strong and happy.

Ingredients:

~Falafel Balls

2 cups carrot
1/3-1/2 cup sunflower seeds
Handful of cilantro
Juice from 1/2 of a lime
1 tsp. Coriander
Sesame seeds

~Tahini Dressing

1-2 heaping Tbsp Tahini
Lime or lemon juice
Dash of cumin

Directions:

~Falafel Balls
1) Blend all of the ingredients in a food processor or blender till the mixture forms a chunky paste. Be careful not to over blend.
2)Scoop out about 1-2 Tbsp sized helpings of the Falafel mixture and press them in to small balls.
3)Dab the Falafel balls in a small bowl of sesame seeds till all surfaces are lightly covered.
4)Arrange the finished Falafel balls on a dehydrator tray and warm them for approximately 30 minutes or place them in the fridge until firm.

Arrange the Falafel in a purple cabbage bowl with lettuce, cucumbers, dehydrated onion rings or any other desired toppings. Top it off with a generous serving of tahini and enjoy the crunch!
