Greasy potato chips vs. homemade root veggie chips:

Not gonna lie, I’ve been craving potato chips for the past week. The craving was the worst when I stopped by the store for coconut water and found myself drooling over the potato chip aisle. Doh! Time to go home and make my own root veggie chips. Homemade is always more healthy because you know exactly what’s going into your food, and you get to control the quality of it.

So without further ado, here’s how to cure your potato chip cravings with a healthy, raw vegan alternative.

 

INGREDIENTS:

3 zucchini

2 large beets

2 sweet potatoes

1 lime, juiced**

1 handful of dill, chopped**

2-4 TBL of extra virgin olive oil

salt and pepper to taste (we used 1/4 tsp Himalayan pink salt)

INSTRUCTIONS

  1. Wash the beets, sweet potatoes, and zucchini well.
  2. Carefully slice the veggies about 1/8-1/4″ wide, trying your best to keep them as even as you can.
  3. Mix all of the oil + spices in a large bowl and toss the sliced beets and sweet potatoes in the mixture for several seconds to coat thoroughly.
  4. Place the veggies slices on your dehydrator trays, on top of teflex sheets if you have it, and dehydrate on low (or 130-140) for 10 – 12 hours.
  5. Store in an airtight container, if you don’t eat them all immediately first!

**we decided to try something different with the zucchini slices:

  1. Mix the lime juice, chopped dill, and salt to your taste in a separate bowl.
  2. Toss the sliced zuchini in the mixture for several seconds until covered thoroughly.
  3. Add them to the dehydrator.

Whew, craving cured!
