Week 3 is in the books!

 

This week in Costa Rica broke some heat records. Someone even told me the temperature was about 6 degrees Fahrenheit higher than normal. When you are in a tropic climate that is already hot, doing hikes and yoga/pilates every day, and in the son, 6 degrees make a huge difference. So much so, that I lost my appetite a few times.

 

Despite the heat and copious amounts of water this week, there were some food breakthroughs. Here they are:

 

1.Hydrate!
I made the mistake on Tuesday of not drinking enough water and I really struggled my way through on Wednesday. No matter what your lifestyle choices are, drinking lot of water is non-negotiable. Once I was able to stay hydrated and keep that feeling, everything in my body starting working like normal again.

 

2.Being able to accept kale
This has been the hardest challenge for me being here. I think kale taste like plastic wrap and the texture is the worst. I am making an effort each week to eat more of it (aka cover it with stuff I want to eat). Each week my dislike of kale weans and maybe this week we can at least be amicable to one another.

 

3.It is ok to treat yourself!
On Friday I went to Nauyaca falls, which was so BEAUTIFUL! It was a 2.5 mile hike each way with some major hills. Afterwards we went to the amazing Mono Congo for lunch when I splurged on vegan and gluten free rice noodles, veggies with dip and a kombucha. It was so rewarding to know I could live this lifestyle, go out to eat, and treat myself. Food and enjoyment should never be exclusive

 

4.Mind over matter
I would have killed this week for a dark chocolate peanut butter cup this week, but by staying focused on the prize I was able to say ta-ta to those craving and instead use that energy to propel my website forward.

 

5.The Joy of Food
This Sunday, I did one of my favorite pastimes: cook for others. Cooking and sharing food is one the most rewarding experiences I think we can share with people. I made a spicy vegan taco meat, turmeric roasted sweet potatoes, and mustard beets. It was so good the pans were cleaned! As my relationship with food changes, so does the food I make. But, the joy I get out of food doesn’t have to change.

 

This the last full week in the EpicSelf Fellowship and I cannot wait to spend some more time in the kitchen, push my body a little more, and become friends with kale.
