This apple crumble is a super tasty, healthy and quick snack to make. Dessert for a snack!? Yes please!
The key ingredient to the caramel sauce is the mesquite powder – it has a beautiful natural caramel taste and is full of minerals, high in fibre, high in protein and low GI (glycemic index).
Ingredients
1 apple
For the crumble
1/2 cup walnuts
1/2 tsp cinnamon
1/4 tsp nutmeg
1 ripe banana
For the vanilla caramel sauce
1/4 cup coconut oil (best is organic, cold pressed)
3 tbsp mesquite powder
1 tsp vanilla extract
1/4 tsp tumeric powder (for that golden caramel colour!)
Method
1} Add the walnuts, cinnamon and nutmeg into a food processor. Pulse the walnuts until they become a crumble.
2} Mash the banana and add to the crumble. (if it still isn’t sticking together add another banana) Place in bowl and put to the side.
3} To make the sauce combine all ingredients in a blender and blend for a short amount of time.
4} Slice apples and sandwich the crumble between the apple. Drizzle with sauce and enjoy!
