Coconut yogurt is so super easy to make! We made this using coconuts and blackberries from the farm at Posada Natura but feel free to add any seasonal berries or flavors you like.  It’s so delicious to add to your breakfasts or scoop a big spoonful in your fruit smoothie for a decadent creamy twist, or even freeze it for frozen yogurt heaven!

 

Ingredients

~ The fresh meat from 5 coconuts

~ 1/2 cup of blackberries

~ 2 capsules of organic, vegan probiotics (split the capsules in half and use only the powder)

 

Blend all ingredients in a high speed blender until smooth. Feel free to add in extra chunks of blackberries or whichever fruit you choose. Pour into a bowl and cover it with a cloth or paper towel (it is important to let air in) and let sit overnight in the refrigerator.

 

We made delicious breakfast wafers and topped them with coconut yogurt and our favorite fruits for a nourishing and filling breakfast.
