If you like a light lunch with a fresh taste, veggie wraps are a great option. The are also very fun to make, as you can be super creative. Everybody can make their own version and you don’t have to follow a strict recipe.

It was a beautiful, hot day here at Epicself HQ and we cut up our favorite veggies and used a Kale leaf for wrapping. You can also use any other greens to wrap. We whipped up a Mediterranean style Hummus to go with our wrap! So good!

Ingredients for two wraps:

1 red pepper

1 avocado

1 cucumber

1 carrot

Cut them into large slices and put them on your favorite greens to wrap.

Traditionally, Hummus is prepared from cooked chickpeas (garbanzo beans). Our raw vegan version is made with sunflower seeds, which are a great source of vitamins and minerals.

They are an excellent source of Vitamin E. Vitamin E has significant anti-inflammatory properties and helps preventing cardiovascular disease in reducing cholesterol levels.

Sunflower seeds are a good source of magnesium. Magnesium is necessary for healthy bones and our body’s energy production. On top, it relaxes us and calms our nerves.

Sunflower seeds are a good source of selenium, an important trace mineral. It helps your body to detoxify and assists in repairing your DNA. Pretty powerful!

Ingredients for the Mediterranean style, raw vegan Hummus:

1 cup of sunflower seeds

¼ cup of water

2 cloves of garlic

½ cup red onion, chopped

2 limes, freshly juiced

½ cup of Parsley, chopped

pink Himalaya salt and black pepper to taste

Soak the sunflower seeds for a couple of hours before using them. You don’t have to, but it makes your hummus much creamier. Put your soaked sunflower seeds in a high speed blender or food processor and add the water. Once you have a uniform, thick paste, add all of the other ingredients. You can spice up your hummus with Cayenne pepper and paprika, we used pink Himalaya salt and black pepper.

To serve, top your veggie wrap with your yummy hummus and enjoy! We put spicy cauliflower poppers and some vegan bread crumbs on ours! Killer!
