Weeknights are tough – especially on a Thursday. So close to the weekend, yet so far. That doesn’t mean you have to sacrifice a home-made meal that is quick, healthy, and delicious. These raw vegan stuffed peppers will have you snacking as you make them.

Recipe
Makes 2 stuffed peppers  

Taco Meat:
1 cup sunflower seeds

Juice of 1 lime
6 dashes of each of the following:
-oregano
– cumin
-garlic powder
– cayenne
3 dashes of cinnamon
2 tablespoons coconut aminos 

Soak sunflower seeds in cold water for 1 hour. Drain and rinse. Place in food processor and add the rest of the ingredients. Pulse until meat like. Set aside.

Salsa:
1 large tomato, chopped
1/2 red onion, chopped
Juice of 1 lime
1 handful of cilantro, chopped

Mix all ingredients. Set aside.

Peppers
2 large red peppers
1 avocado, halved and sliced

To assemble:

Cut off the top of the peppers and pull out the seeds. Line with sliced avocado. Stuff 3/4 way with taco meat and fill the remainder with the salsa. Serve with lime, a side of salsa, and any remainder avocado.


The best way of eating these is just to bit into them! Enjoy!
