One of the most common questions a vegetarian, vegan and especially a raw vegan is asked is, “Where do you get your protein?”

While certain industries would have you believe otherwise, there are a ton of plant foods extremely high in protein! Some of the top providers include nuts, seeds and hemp hearts while some of the lesser known powerhouses are seaweeds such as chlorella and spirulina. Even kale and avocados have protein!

 

One of the benefits of transitioning to a raw vegan diet is a feeling of lightness. This lightness can be partly attributed to the elimination of cooked plant and animal protein sources and the sheer amount of digestive power required of us to break them down.

When we eat foods that are saturated with live enzymes and bioavailable nutrients our digestive organs are given a break. This frees up vital energy that can be redirected to other activities such as cleaning up junk floating around the body, creative thinking or playing outside in the sunshine!

This light energetic feeling is incredibly refreshing however every now and again everyone wants that stick to your ribs kind of meal. The kind that’s full of chewy texture, succulent fat and hardy protein.

Well that’s exactly how we felt at the Epic Living HQ today! In order to satiate that more filling craving we decided to create a hemp and sunflower seed paté draped over a perfectly ripe avocado served with a vibrant cauliflower rice based salad.

This meal is densely nourishing, totally filling yet massively uplifting!

Serves 3

Salad Ingredients:

  • 1 head of cauliflower
  • 4 florlets of broccoli
  • 1 small red onion
  • 1 small red bell pepper
  • 1 small cucumber
  • 1 carrot
  • 4 stalks of kale
  • 1 cup of shredded red cabbage
  • 1 mango
  • chopped cilantro to your liking
  • 2 limes
  • 1/3 cup of extra virgin olive oil
  • 1 tsp cumin

 

Directions:

  1. Pulse cabbage and broccoli in a food processor until it reaches a rice like consistency
  2. Dice carrots, cucumber and mango into cubes
  3. Chop red onion, red pepper and kale
  4. Place everything to a bowl and set aside
  5. Add the juice and zest of both limes to a blender
  6. Add the olive oil, cumin and 3 cubes of mango to the blender and blitz
  7. Drizzle the dressing over your salad and toss to coat

 

Sunflower Seed Pate Ingredients:

  • 2 cups sunflower seeds soaked over night
  • 1/4 small red onion
  • 1/3 cup of hemp hearts
  • 2 tbsp extra virgin olive oil
  • 1 tbsp of chilli powder
  • 2 tbsp Bragg’s liquid aminos
  • 1 tsp lime juice
  • 1 clove of garlic
  • 1/2 avocado per person

 

Directions:

  1. Rinse soaked sunflower seeds and add them to a food processor with all other ingredients aside from the avocado
  2. Pulse until it reaches a texture that is smooth and pliable yet still a bit chunky
  3. Spoon the mixture into and over the half avocado
  4. Serve with cauliflower rice salad and ENJOY!
